The 2020 harvest began after a mild winter, little rainfall, and a uniform vegetative recovery. In May and June, abundant rain slowed down plant development but provided good water reserves in the soil, helping the vines cope with the summer heat. Autumn brought ideal weather conditions, allowing all grape varieties to reach optimal ripeness. In conclusion, 2020 was an excellent vintage.

The Dolcetto grape is deeply rooted in the tradition of our Langhe. Paulin aims to be a clear and faithful version of that heritage. It is made from several vineyards, blended to achieve this purpose. The 2020 vintage shows both floral and fruity notes, with subtle spicy hints adding depth. On the palate, it is smooth and flowing, with a soft entry, full development, and a return of crunchy fruit on the finish.

We take care of our vines one by one, because each one is different from the others. We make mass selections from the oldest and most interesting plants in order to preserve the original genetic imprints. We seek balance in the individual plant, which then becomes the balance of the entire vineyard, and then of the wine we produce.
