Vinification: The grapes of the vineyards, most of which are very old with about 100 years, are subjected to a sorting / choice on arrival at the winery, where they are selected and later destemmed. The pre-fermentation maceration at low temperature is followed with roasted step in stainless steel mills. They are then taken to stainless steel vats with a controlled temperature between 25 and 28º where the alcoholic fermentation ends. During this procedure the usual “reassembly” and “deslagging” work is carried out, aiming at the strictly selective and restricted extraction of the desired constituents. Winemaking ends with post fermentation maceration. The masses remain in contact with the must for up to 18 days. Stage: In barrels of 225 and 300 liters of French oak for a period of about 18 months, according to each batch and caste. Use of 70% of new oak barrels and 30% of second and third year oak barrels.
