CV – Curriculum Vitae Douro Tinto comes from a single vineyard in the Torto River Valley. Over 25 different varieties from a single vineyard over 80 years old – including Rufete, Tinta Amarela, Donzelinho Tinto, Tinta Francisca, Sousão, Touriga Franca, Tinta Roriz and Touriga Nacional, among others. All the grapes are picked and selected by hand before being destemmed and placed in granite presses. All grapes are crushed by foot 2 to 3 days before fermentation begins. The wine will ferment in lagares and occasionally be trodden on to extract the tannins, colour and aromas of the wine evenly. The wines are transferred to 75% new French oak barrels (225 litres) for malolactic fermentation and aging for 21 months. Final blending is carried out approximately one month before bottling.
