Bibi Graetz
Testamatta — meaning “stubborn” in Italian — is the best word to describe Bibi Graetz: a positive, creative, and passionate person. Testamatta is a wine made from 100% Sangiovese, coming from young vines about 20 years old, and represents the perfect combination of tradition and creativity, expressing the purity and elegance of this native grape variety.
Vintage 2022: Compared to the previous year, 2022 had lower average temperatures with much higher heat peaks, especially during the summer. Thanks to the higher altitudes of our vineyards and their constant exposure to wind, there were no problems related to water stress or heat damage on the plants, resulting in good production both qualitatively and quantitatively. The ripening of the grapes took longer and was very balanced, which allowed the creation of extremely elegant wines with medium acidity and perfect balance. The harvest began on September 15 and ended in mid-October.
Vinification and Ageing: The grapes for Testamatta were handpicked from the winery’s six best vineyards: Vincigliata, Olmo, Londa, Lamole, Montefili, and Siena. Each vineyard was divided into parcels and then harvested, ensuring all grapes were picked at the ideal ripeness. After selecting the best grapes in the vineyards, a second selection took place at the winery before destemming, guaranteeing the purest possible final product. At this stage, the Sangiovese grapes were gently pressed and then placed in open 225-liter barrels for the smaller parcels, and in 50-hectoliter vats or stainless steel tanks for the larger ones. Fermentations were carried out by natural indigenous yeasts, with up to 3 manual punch-downs per day at the fermentation peak, gradually decreasing to only 1 to keep the cap moist. After fermentation, the wines were transferred to used barrels and 50-hectoliter vats where malolactic fermentation took place. The wine aged for about 18 months before bottling.
