Monumental — there’s no better word to describe this vintage. Roundness in every single aspect of the wine: elegance, freshness, and an extraordinary acidity that provides very fine layers, surprisingly detectable on the nose and at first sip. Colore 2019 celebrates my 20th anniversary as a winemaker. It’s been a great journey since 2000, full of achievements, and with this vintage, I feel like I’m finally closing the circle. At first, my wines aimed for structure and concentration. In 2009, I realised that elegance had to be the guiding principle. In 2019, I achieved it.

Bibi Graetz

Colore is the ultimate expression of Bibi Graetz’s dream, coming from very old Sangiovese vines. Poor soils mixed with sand and stone, along with high altitude, create the perfect terroir for a wine that expresses the very essence of Tuscany and its ancestral taste. Only the finest barrels from the entire production are selected to become Colore.

Vintage 2019: The 2019 harvest provided ideal conditions for a full and healthy development of the vines. In spring, the limited rainfall helped prevent disease. Summer was marked by a good diurnal temperature range and a very mild climate, which allowed the grapes to ripen slowly and thoroughly.

The result was a harvest with perfect levels of sugar and acidity, and remarkable aromatic complexity. Harvest took place from September 21st to October 8th.

Vinification and Ageing: The grapes for Colore were hand-harvested from three vineyards: Lamole, Vincigliata, and Siena. Each vineyard was picked up to eight times to ensure the bunches were harvested at optimal ripeness. After an initial selection in the vineyard, a second rigorous sorting took place at the winery before destemming. The berries were then gently pressed and placed in open-top barriques, with each plot vinified separately. Fermentation was carried out with indigenous yeasts, without temperature control, with 6 to 8 manual punch-downs and pump-overs per day, and no bleedings. It lasted around two weeks, followed by one additional week of skin maceration. The wine was then transferred into new barriques, where malolactic fermentation occurred. Each parcel aged separately for almost 20 months before the final blend was determined.
