Bibi Graetz
From some of the oldest Sangiovese vineyards is born the ultimate expression of Bibi Graetz’s dream: Colore. Poor, sandy soils rich in stones and located at high altitudes create the perfect terroir for a wine capable of telling the story of Tuscany and its flavours. Only the best barriques will become Colore.
Vintage 2022: Compared to the previous year, the 2022 vintage had lower average temperatures but much higher heat peaks, especially during the summer months. Thanks to the higher altitude of our vineyards and their constant exposure to the wind, the vines avoided water or heat stress. As a result, the production was excellent both in quality and quantity. The grapes matured slowly and evenly, leading to wines of great elegance, with moderate acidity and perfect balance. The harvest began on September 15 and ended in mid-October.
Vinification and Ageing: The grapes for Colore come from two vineyards: Lamole and Olmo. Each vineyard is divided into parcels, which are harvested separately to ensure optimal ripeness. After an initial selection in the vineyard, a second, meticulous sorting takes place in the cellar using two sorting tables, allowing only the best berries to be used.
The Sangiovese grapes are gently crushed and transferred into open 225L barriques, stainless steel tanks, or 50HL conical wooden vats, keeping each parcel separate. Fermentations are carried out with indigenous yeasts, with 3 manual punch-downs or pump-overs per day at the fermentation peak, gradually reduced to 1 per day after about a week.
Once fermentation is complete, the wine is transferred into barriques and wooden vats for malolactic fermentation and aged for 18 months.
