O Produtor, tasting note published in October 25th 2019

After the magnificent 2015 harvest, I did not believe that the quality of 2016 could be even better! Walking through the vineyards during the harvest, I felt surrounded by hundreds of bronze sculptures; the grapes looked like true works of art. The wine’s result does not surprise me: powerful, with great tension and a solid structure. Full-bodied and dense, this Colore reveals plenty of blackberry, tobacco, and plum notes.

Bibi Graetz

Colore is the ultimate expression of Bibi Graetz’s dream. The ambition of this wine is to create the pure excellence of Tuscany, a wine made with traditional Tuscan grape varieties from some of the oldest and rarest vineyards in the region.

Sangiovese provides the wine’s structure and power, Colorino offers fruit and velvety tannins, and Canaiolo brings minerality and intensity. Only the best barrels from the entire production become Colore.

Harvest 2016: This vintage enjoys a great reputation throughout Italy, especially in Tuscany. 2015 and 2016 have been among the best harvests in recent years, each with its own characteristics. In fact, 2015 is more approachable and less full-bodied, while 2016 stands out for its strength, complexity, and structure.
The 2016 growing season was very regular, with a pleasant balance of rain and sun during spring, preceded by a mild winter. The vines had the opportunity to fully develop their foliage, and sporadic summer rains provided just the right amount of water for grape development. September and October had few rainy days and were mostly sunny, allowing for a long ripening and harvest period. Harvest began on September 26 and ended on November 3.

Vinification and aging: The grapes for Colore were selected from three vineyards: Lamole, Vincigliata, and Siena. Each vineyard was harvested up to eight times, allowing manual selection of grapes at their optimal ripeness. After the first selection in the vineyards, a second selection takes place at the winery before destemming. The grapes were gently pressed and placed in open vats, with extreme care to keep each parcel separate from the others. Fermentation is carried out by natural indigenous yeasts, with 6 to 8 manual punch-downs per day, without temperature control or pumping over, lasting about two weeks, followed by another week of maceration in contact with the skins. After fermentation, the wine is transferred to new barrels where malolactic fermentation occurs. Each parcel is aged separately for nearly three years before the final blending decision.

Bibi Graetz

Bibi Graetz Winery was founded in 2000 on the hills of Fiesole, overlooking Florence, where Bibi, raised in a family of artists, fell deeply in love with wine and made it his life. Fascinated by old vines — for their finesse, elegance, and the purity of the fruit they produce — Bibi Graetz now holds one of the largest collections of old vineyards in Tuscany.
