Altano
The first harvests (2007, 2008 and 2009) were produced from grapes exclusively from Assares, the first of the three Symington family vineyards in the Vilariça valley to receive full organic certification. The remaining vineyards, AtaÃde and Canada, have received organic certification since the 2010 harvest.
Vinification: Rigorous selection of grapes on a selection mat (triage); total destemming and crushing; inoculation with selected yeast; fermentation in stainless steel vats with prolonged maceration with reassembly at a controlled temperature of 25-26°C. Aging: Nine to ten months in French oak barrels.
