Taittinger’s “Comtes de Champagne Blanc de Blancs 2011″ is produced exclusively from grapes from the five Grand Crus of the Côte des Blancs (Avize, Chouilly, Cramant, Mesnil-sur-Oger and Oger). Spread over a strip of just 20 kilometres, this exceptional terroir owes its uniqueness to its limestone soil, which gives it minerality, power and a rare aromatic finesse.
The mild winter conditions favour early bud break. The drought in spring leads the vines to search deeply for the water reserves they need to develop properly. With late ripening, the 2011 Comtes de Champagne Blanc de Blancs reveals all the finesse, freshness and richness of the Grand Crus of the Côte des Blancs.
This rare and world-renowned cuvée goes through a rigorous and lengthy production process. Only the purest must from the first pressing is used. 5% of the wines that make up the blend are aged for 4 months in new oak barrels, renewed by a third each year, which gives it toasty notes. Finally, this exceptional champagne is patiently aged for ten years in the underground galleries of Roman origin of the former Saint-Nicaise Abbey in Reims.”
Although it can be consumed immediately, this Blanc de Blancs can remain in the cellar for several decades to express its full range of flavours.
