To the eye Light gold, brilliant with fine and dynamic bubbles. A beautiful, persistent and generous mousse. To the nose Open and fruity with notes of white currant, fresh quince and citrus fruit. The passage in wood (20% of the volume of the blend) brings honeyed and toasted aromas for a slightly vanilla finish. In the mouth The palate is fruity and fresh, with a beautiful mineral texture reminiscent of chalk. The finish is long and persistent with subtle touches of pepper and spice.
Blending First press exclusively of Premiers and Grands Crus. 100% Pinot Noir from the Montagne de Reims and from our vineyards of Mareuil-sur-Ay, Ay and Avenay Val d’Or. Vinification Traditional vinification avoiding any premature oxidation. Partial malolactic fermentation for wines in vats, vinification without malolactic fermentation for wines made in wood. Extra-brut dosage (4.25 g/l) to maintain the balance between freshness and alcohol and not to mask the wine’s character and purity. Ageing Aging of at least five to seven years to obtain the greatest complexity of the wine and to bring out the secondary and tertiary aromas, marks of the prolonged aging on the lees.
