Quinta de Santa Teresa
The manual harvest of Avesso began on 30 August. The grapes were received at the winery in 24kg boxes. Manual selection followed by destemming, skin maceration and gentle pneumatic pressing.
The must ferments in stainless steel vats at a low temperature. Stabilisation without filtering. No animal derivatives are used in the process, making this wine suitable for vegan consumers. Special care has been taken in the winemaking process, minimising any intervention, with the aim of producing a wine that expresses the particularities of the grapes and the terroir. Bottled in May 2023.
