We started the white grape harvest on August 26th to pick plots with greater freshness. Considering the significant evolution we observed, it proved to be a great decision, resulting in wines with beautiful acidity and aromatic freshness. Every harvest is unique, and this was no exception. 2021 was another challenging and atypical year, where high-altitude grapes ultimately benefited from the prevailing weather conditions.

Vinification: Alcoholic fermentation in stainless steel tanks at a temperature of 14-16°C.

Aging in stainless steel tanks with its fine lees, ensuring greater complexity and longevity.

Bottling: February 2022
