Vinification: The grapes from several very old vineyards, over 80 years old, in the Alto Douro Vinhateiro (Mêda), were whole bunch pressed in order to extract the freshest and most vibrant must possible.
Maintaining the origin of each vineyard, the musts underwent alcoholic fermentation in new 500 litre French oak barrels for 4 months. The fermentation process using indigenous yeasts brings more complexity and character to the wines. Long maturation on the lees (12 months). Partial malolactic fermentation (30%) in French oak barrels completes the Burgundy-inspired journey.
Ageing: 12 months in barrels + 6 months in stainless steel ‘mass assemblage’ + 7 months in bottle.
