Bical is harvested in early September, Arinto on the other hand matures later and is and is harvested 2 – 3 weeks later. Vinification takes place separately. The wine ferments on its lees without batonnage. The wines naturally stabilise during the cold winter. The final blending is done in early spring, when the wine is stable and ready for bottling.
