Load the press with whole grapes in an inert environment (nitrogen) to avoid oxidation. Pressing up to 0.4 bar. Cold static clarification for 48 hours. Fermentation temperature: 16 – 18ºC in stainless steel. Stage in stainless steel tanks of 5,000 liters in an inert atmosphere (nitrogen), batonnage” until bottling.
