Bacalhôa
Produced with Chardonnay grapes from our “Cova da Ursa” vineyard, located in Serra da Ursa in the hills of Azeitão, in the Serra da Arrábida. Its stony clay-limestone soil and the meso-climate of the Serra da Arrábida area mean that the grapes of this variety ripen slowly and achieve high quality. The winemaking technology includes fermentation and maturation of 60% of the wine in new fine-grained French oak barrels. Batonnage is also carried out daily in the traditional way for greater complexity of aromas and flavours.
Produced since the 1986 harvest for the Cova da Ursa brand, it was the first Portuguese Chardonnay and also the first white wine brand to ferment entirely in new French oak barrels in Portugal.
