Kelman
Vinification: The grapes came from a single plot with older vines (50 years old on average) whose vines were planted in the old Dão way. There are ten different Portuguese grape varieties, typical of the region, all blended together, which conditioned the vinification together as they were in the vineyard. The grapes are picked by hand and transported to the winery in small boxes. After manual bunch selection and destemming, the grapes are crushed by treading in granite presses, where fermentation also takes place. The maceration takes place in a delicate way to enhance all the typicality of these indigenous varieties, favouring the extraction of fruit and fresh tannins.
Ageing: 6 months in third use French oak barrels and the rest of the time in stainless steel. Before bottling, the wine is lightly clarified (with plant-derived products) and then filtered to maintain all its aromatic potential and structure. Stabilisation and most of the clarification is natural.
