Mata Fidalga
The base wine was vinified with an open spout, with the grapes pressed directly in a vacuum press, and only the first 50% of the must was used. It was clarified by static sedimentation. After the very careful must extraction and clarification, the base wine fermentation took place in stainless steel vats at controlled temperature. The sparkling wine was obtained by the classic method, with refermentation in a cellar at 14ºC and ageing on lees for 14 months, for the first batch to be tasted. After dégorgement, this sparkling wine aged at least 2 months before sale.
