Vulcânico
Harvested manually in 40kg baskets, the bunches are carefully selected from a sorting table and then the grapes are crushed and transported to the fermentation tanks without the help of pumps. Here they are macerated in 3 to 6 hours at low temperature and the resulting bleeding ferments spontaneously at 12ºC, in order to maintain all the aromatic potential.
