Quinta de Ventozelo
Grapes were harvested by hand in September for 25 kg boxes. After a selection of bunches in the vineyard, the berries were also chosen by optical sorting at the entrance of the winery, so that only the perfect berries could be used. These were then chilled, destemmed and pressed in an inert environment. The subsequent cold decantation and fermentation took place at a temperature of 16ºC. Stainless steel vats.
