The maturation phase occurred later, due to lack of water in the soil and heat. The harvest took place in August, in order to avoid over ripening. The harvested grapes rested for 24 hours in a refrigerated container at 8º C in order to protect the integrity of the bunches. After selection on a selection belt, they were introduced in the vat with whole bunches, where the drained must was drained to proceed with fermentation. This allowed us to have a fresher must, acid and not very rich in colour. Fermented for 4 months at low temperature, having remained on the lees during the winter.
