Manual harvest in 20 Kg boxes. The bunches are selected in a selection table and then the grapes are crushed and transported to the fermentation tanks, without the help of pumps. Here they are macerated between 3 and 6 hours at low temperatures. The resulting sangria ferments spontaneously at 12ºC in order to maintain all the aromatic potential.
