Quinta dos Roques
Crushing of the grapes with total destemming, followed by fermentation in stainless steel vats, with
selected yeasts, at a temperature of 28-30oC. The maceration time was 14 days and the pumping over was smooth. Ageing in 225 litre French oak barrels for 14 months.
Before bottling the wine was subjected, only, to a light filtration by cellulose plates, in order to preserve all its structure. Bottled in August 2019.
