Quinta dos Roques
Crushing of the grapes with total destemming, followed by fermentation in stainless steel vats, with selected yeasts, at a temperature of 28-30oC. The maceration time was 12 days and the
pumping over was smooth. Ageing in 225 litre French oak barrels for 10 months.
Before bottling the wine underwent only slight cellulose plate filtration in order topreserve all its structure. Bottled in August 2019.
