Mechanical harvesting during the night. Total destemming. Pre-fermentative cold maceration for 48 hours. Fermentation under controlled temperature (21ºC – 25ºC) in stainless steel vats. Malolactic fermentation in stainless steel vats. 10% in 400L barrels for 3 months.
