The harvest took place in mid-September. The grapes harvested were selected from the vineyard and then introduced into the vats with 40% destemming and 60% whole bunch, allowing to extract more gently the compounds of color and aromas during 2 weeks of alcoholic fermentation totally in stainless steel vats, having completed the malolactic fermentation in stainless steel. After 12 months in a French oak vat preceded by more than 40 years of Cognac.
