It started at the beginning of September, with the aim of maintaining the high levels of acidity, balance and freshness of the wines. As in the previous year, the early start avoided the over-ripening of some more exposed vines and the rain at the end of the month. The grapes were harvested in an optimum state of ripeness, with a high acidity content and balanced sugar levels. After selection at the entrance of the winery, the grapes were 100% destemmed and fermentation took place in stainless steel vats with 8 to 15 days of skin maceration. Part of the wine was aged in used French oak barrels for 12 months.
