Uncoupling and crushing. Fermentation takes place with very little mechanical action: low reassembling intensity and 2 “de-staging”, to preserve elegance. Maceration after fermentation until the end of November. Fermentation temperature: 23-25 C in stainless steel tanks. Staging in stainless steel tanks of 5,000 and 10,000 liters.
