Winemaking
This wine comes from a single parcel of old vines, made up of a mixture of white and red grape varieties. The entire plot was harvested manually and in one go, in 20 kg crates. The selection of bunches and berries took place in the cellar, where 50% of the bunches were de-stemmed and lightly crushed and the remaining 50% entered intact for fermentation. The must, in contact with the skins and seeds, fermented in stainless steel tanks at controlled temperature (24ºC / 26ºC).
