After manual harvesting and rigorous selection of the grapes, the destemmed grapes were placed in three types of fermenters: part of the grapes fermented in stainless steel tanks, another in used barrels and another in terracotta vases. . The fermentation of this wine was as natural as possible, following a minimal intervention strategy and without adding oenological products.
