Quinta Vale D. Maria
The grapes were trodden by foot in traditional granite lagares prior to fermentation, together with 15% of the total brandy that would be added to the Port. This allows the grapes to macerate at lower temperatures and for a longer period. Fortification is done in a single step, adding the remaining brandy when the must is ready for fortification. This is followed by foot treading, so as to ensure a good homogenisation of the whole wine and the cessation of fermentation. The wine is then placed in oak and chestnut casks and transferred to stainless steel vats during the warmer months.
After 21 months ageing, we blend for bottling. June 2020 – 6,500 bottles of 75cl and 150 Magnums
