Harvest by hand at its best, the grapes are destemmed, crushed and vinified in a careful maceration with extraction of colour, tannins and film aromas, complemented by permanent pumping during fermentation. This process takes place in vats at a controlled temperature between 28-30ºC, until the desired Baumé is reached. At this stage grape brandy is added (benefit), originating a fortified wine. An exceptional quality wine, obtained by blending several harvests in order to acquire a complement of organoleptic characteristics typical of this aged tawny style. Matured in wood for varying periods of time when the age mentioned on the label corresponds to the approximate average of the different wines aged in the blend, expressing the character of the wine with regard to the characteristics conferred by ageing in oak casks.
