Strict manual selection of grapes on the conveyor belt at the entrance to the winery and total destemming. Pre-fermentative pelicular maceration, followed by slight pressing of grapes with separation of musts by potentiometric. Careful fermentation in “bica aberta” at controlled temperature, in stainless steel vats, for approximately a month. At the end of the alcoholic fermentation, the wine aged for 4 months “sur les lies”, during which weekly batonnages were performed.
