This wine comes from 24-year-old vineyards, planted in clay-limestone soils with South-North exposure. The wine was harvested manually in 20 kg boxes. Winemaking: The fermentation took place during 18 days at low temperatures in French oak barrels. After fermentation, the wine staged in the same barrels in contact with the fine lees, during 9 months, with “batonnage”. Limited to existing stock. Chocapalha is almost like a person, we have a very close and intense relationship. It all started in 1987 when Alice and Paulo were looking for a property that would become their Family Project and where they could make great quality wine. At Quinta da Chocapalha, every member of the family is part of creating the spirit of this project. Alice and Paulo Tavares da Silva found the estate to carry out their family dream. There was so much to be done, but they quickly took on the necessary work to make Quinta da Chocapalha what it is today.
