Nose: Highly elegant and pure! Refined and complex, showing yellow peach, ripe Granny Smith apple, lime, melon, and a charming floral note like honeysuckle. With a bit of air, it even opens up with notes of wild strawberries! Marvelous!

Palate: Also seamless and elegant on the palate, with a tight-knit texture and the same complexity as the nose. Impeccably balanced and long, with a perfectly integrated acidity and a very harmonious and extended finish.

A superbly crafted Galatzó with increased complexity added from the small additions of Sauvignon Blanc and Viognier this year.

This wine is named after the Puig de Galatzió mountain, which is part of the Sierra de Tramontana range. With its 1,027 meters, it is one of the tallest mountains on Mallorca, situated just behind the beautiful town of Estellencs.

Here, white grapes have always played a major role, and the choice of this name for the white wine pays homage to Giro Ros and Chardonnay. The mountain faces the winery at a 265° angle.

Winemaking: Chardonnay was harvested on August 11th and 12th and processed, resulting in a total of 4,695 kilos, which yielded 2,300 liters for fermentation. (Since white grapes are pressed very lightly, about 35-50% of the total amount harvested is always lost during processing.) On August 16th and 17th, a total of 6,563 kilos of Giro Ros was harvested, which, after processing, resulted in 4,250 liters of beautifully textured and structured juice for fermentation. After fermentation, it was decided to blend the 2,300 liters of Chardonnay with 2,900 liters of Giro Ros and then add some charm and spice in the form of 1,150 liters of Viognier and a touch of Sauvignon Blanc for freshness and nerve! The remaining Giro Ros was placed into two 500-liter oak barrels as an experiment and a small 250-liter tank to top up.

Aging in stainless steel tanks from September 2021 to March 2022. Bottled in March 2022. Released in May 2022.

Galatzó can be enjoyed anywhere and with anything! A highly versatile wine that will make any occasion, food, or company shine brighter and bring out the best in everything and everyone. Serve Galatzó in a proper large glass to let it breathe and see how it reveals its beauty with a bit of air.

Delicious with razor clams, seared in a pan for 2 minutes until they open, with fresh olive oil, a bit of parsley and garlic, and a splash of this same wine and lemon juice. For something slightly more elaborate, a suggestion would be oven-roasted sea bass with coconut milk, ginger, chili, lime, and coriander. Indulgent but a marvelous pairing!
