Manual harvest in 20kg boxes. Direct pressing, decantation, fermentation and maturation of the base wine on fine lees 6 months. 2nd fermentation in bottle with free yeasts, according to the classic method 12 months. Use of old wine in the tirage. Bottles are subject to the remuage process.
