Grapes harvested from different vineyards of Casal Santa Maria. The vines have been prepared in the last 3 years for the production of grapes for this wine. Year: During the maturation of the grapes the weather was hot and dry, conditions favorable to a good flowering avoiding phytosanitary problems in the grapes. August brought the typical fog of necklaces and cooler temperatures. This set of climatic factors originated small bunches, very concentrated translating into balanced and very aromatic wines. Winemaking: As in all the wines of the Sta. Maria wine the vintage is always manual, in the field and in the cellar there is an enormous effort of selection of the best curls and berries. Light pressing, avoiding film macerations, the must decants about 48 hours in a stainless steel tank. Fermentation in new and used French oak barrels of 228L and 500L. Aging in barrel about 10 months with weekly “battonage.
