Sandeman Collect. Box
Selected by Sandeman for its exceptional features, this Vintage will age brilliantly in the bottle for a period of 20, 25 years. Vintages usually peak during their 15th. Being this a 2000 Vintage and the year being 2015, this wine is perfect for serving immediately, and will still develop over the next 10 years. How was it made? After the vintage, the wine remained in the Douro and was racked for the first time in the winter. During this first racking, final adjustments were made to levels of alcohol and acidity. It was transported to Vila Nova de Gaia during the following spring to begin the traditional Porto ageing process in oak vats, which are a characteristic of the Sandeman style. During this period, the wines are racked, analysed and tasted numerous times, so that their maturation can be monitored. Some wines are blended together, some corrected if this is thought necessary on tasting. The final blend is decided upon after stringent selection amongst the wines, always seeking the best quality. Thus, over the first two years, the wine matured under the watchful eye of the winemaker, who tasted it regularly. Being a natural, traditional wine of high quality, this wine does not undergo the usual finishing procedures, so it may later throw a perfectly natural deposit in bottle. This needs to be removed by decanting before drinking if the wine is to be enjoyed at its best.
